Pea, Asparagus & Mint Soup + Flash-cooked Asparagus with Egg Salad
Asparagus season has well and truly begun. I always wait a few weeks for the bunches to come down in price until they become a regular on the dinner table. The youngsters in my house continue to express their dislike of the green spears, which honestly doesn’t bother us, the parents, in the slightest - all the more from us!Â
For the most part, I keep my preparation of fresh asparagus pretty simple. I find a quick flash in the pan perfectly caramelises the outside while retaining some crunch on the inside. I hope these recipes tickle your fancy to get creative with asparagus in the coming weeks.
My 2025 Recipe Calendar is now available
Thank you so much for your support of my latest recipe calendar. The early orders help to cover the cost of the print run and production time. I print limited numbers each year so make sure to order if you would like a recipe calendar on your kitchen wall - they sold out before Christmas last year.
The calendar months are from December 2024 - December 2025 so you can start to add notes/events to the calendar straight away. Each month includes a delicious recipe with my signature food photography. This is my 8th calendar and the recipes can be referred to for years to come. I keep my copies from previous years on my cookbook shelf for easy reference.

I love the sound of the pea and asparagus soup. It’s good that spring asparagus falls while it’s still cool enough for soup and before the heat of summer makes the thought of hot food unbearable. Actually, would it work chilled?
